I'm absolutely in love with Mexican Cuisine. If you find that your meals are in a rut, there is no easier way to add some excitement again than with a little Latin flair!

In this video I provide you with my favorite recipes for making flour tortillas, refried beans, guacamole, salsa and an amazing salad that uses all of the above.

If you ever wanted to learn about Mexican cuisine, you will find here 4 staple recipes that will carry you very far on your journey.

Flour Tortilla Recipe

This is an absolutely amazing recipe for flour tortillas. It is in my opinion, the best of the bunch. After you know how to make these, you’ll find every excuse to add them to every meal.

1. Mix together the following :

2 Cups of Unbleached Flour
1/2 tsp Salt
1/2 tsp Baking Powder
1/4 Cup Shortening or Lard
2 Tb Butter
2. After everything is well mixed, add 3/4 Cup of warm water and mix until a slightly tacky ball is formed.

3. Let the dough sit in a bowl, covered with a warm damp cloth for about 20 minutes.

4. Form the dough into golf ball sized balls and roll them flat

5. Cook the tortilla 20 – 25 sec. per side in a cast iron skillet on high

Refried Beans Recipe

A staple of Mexican cuisine! Normally refried beans taste gummy and pasty in restaurants. These beans are pure mellow comfort food. I guarantee you will be amazed by how good they are.

1. Soak 2 Cups of Black Beans for 3 hours and then drain the water

2. Add the following and cook at 50% on your stove for 2 hours

2 Cups of Soaked Black Beans
10 Cups of Water
3/4 Cup Chopped White / Yellow Onion
3 Tb Shortening or Lard
3. Add the following to the pot and cook for another 20 minutes at 50%

1 Tb Fresh Thyme
2 tsp Salt
1 Chopped Jalapeno
4. Fry 1 Cup of Chopped White / Yellow Onion in 1/2 Cup of Vegetable Oil for about 3 minutes

5. Drain liquid from the Beans

6. Add Beans and Onion to the blender and blend until a paste is formed

7. Fry Bean paste for about 5 minutes at 50%

Salsa

This is a basic fresh salsa recipe. The great thing about it is that it can be easily used to make the guacamole below.

1. Roast, or don’t 3 Tomatoes & 1 Jalapeno

2. Remove the skins, or don’t from the above

3. Add the Tomatoes, Jalapeno and the follow to a blender

1 Tb Chopped Garlic
1/2 Cup White / Yellow Onion
1/3 Cup Cilantro
1/2 tsp Salt
4. Drain excess water from the salsa

5. Add 1/4 cup of Tomato Sauce, or any other spices you like

Guacamole

Guacamole is amazing! There are very few things that pack all of the flavors you find in Guacamole.

If you made the salsa above:

Add the following to the blender and blend:

2 Avocados
1/3 Cup of Salsa
1/2 Tb Lime Juice
If you didn’t make the salsa above:

Add the following to the blender and blend:

2 Avocados
1/2 Tb Lime Juice
1 Tb White / Yellow Onion
1 Jalapeno ( No Seeds )
1 /3 Cup Chopped Tomato
1 Tb Cilantro
